Paella (pronounced pa.e.ya)

Originally from Valencia, many of us from outside Spain have come to know it as Spain's national dish. There are several different varieties but the most common are chicken paella, seafood paella and mixed paella (combining meat with fish and vegetables). If you fancy having a go at paella yourself, the larger supermarkets (Mercadona in Rute) supply a pre-made liquid stock intended for use in paella that can work as an excellent base (I know from experience), but if you're more competent and adventurous than I, here's a recipe for a classic paella dish....
